Pkhali (mhali) - original dish in the Georgian culinary tradition (in fact, it's vegetable salads). Usually pkhali is made from a main component and spicy dressing. As the main component can be used spinach, asparagus, chard (leaf beet), cabbage, young nettle leaves, eggplant, green beans and rice. Refuelling is made from walnuts, garlic, onions, hot peppers, herbs, natural vinegar, cilantro and salt. To prepare a tasty pkhali, we need to understand how to install and prepare the right proportions of ingredients. And then - only your imagination and culinary intuition.

Pkhali Eggplant

Ingredients (4-6 portions):

  • 5 large (but not overripe eggplants);
  • 100 grams of shelled walnuts;
  • 1-2 onions, a bunch of coriander;
  • 1 teaspoon hops-suneli;
  • a bit of saffron;
  • 4 cloves of garlic;
  • light wine vinegar;
  • freshly ground black pepper;
  • salt;
  • little sunflower oil.

Preparation:

Washed eggplant (with tails) expand on a baking sheet and place in the oven - bake 40 minutes at optimal temperature for baking - 180-200 C. During this time the eggplants have to turn 3 times to bake evenly. Pull out the pan with baked eggplant and wait until they cool down a bit and carefully remove the peel. We remove tails. Cooled eggplant will lay one on a cutting board and cut with a knife to a state of "caviar".

Now prepare the nut filling. Grind the walnut kernels, onions, garlic and herbs. You can use a meat grinder or food processor, blender. To thus prepared nut mass add spices, a little vinegar and oil in equal parts, salted and mix thoroughly. Mix the dressing with the prepared eggplant weight. You can apply to the table ready pkhali.

Pkhali of green beans

Ingredients:

  • 1 kg of green bean pods;
  • 300 g of shelled walnuts;
  • 1-2 onions;
  • 4-5 cloves of garlic;
  • a bit of saffron;
  • coriander seeds;
  • utsho-suneli (or hops-suneli);
  • cilantro beam;
  • 5-8 basil leaves;
  • 3 leaves of tarragon;
  • salt;
  • vinegar;
  • sharp red pepper.

Preparation:

Decoction until tender young green beans in a small amount of water and Throw in a colander. When water stechёt, finely chop the beans with a knife. Prepare filling. Pkhali cabbage

Ingredients:

  • small forks of white cabbage;
  • 200 grams of walnut kernels;
  • cilantro beam;
  • 2-4 cloves of garlic;
  • hops-suneli;
  • 3-5 basil leaves;
  • chili powder;
  • salt;
  • vinegar.

Preparation:

Lightly boil cabbage and pass it through a meat grinder (you can use the processor). Now - filling. Grind the nuts, herbs and garlic. Add vinegar and spices. Mix in a salad bowl cabbage weight and fuel. You can roll up the balls and arrange them on a platter and garnish with pomegranate grains and green leaves.

Pkhali of beet

Ingredients:

  • 0.5 kg of beet;
  • 200 grams of walnut kernels;
  • bundle of coriander 2-5 cloves of garlic;
  • hops-suneli;
  • salt;
  • pepper;
  • pkhali
  • vinegar
  • vegetable oil.

Preparation:

Decoction crude beets, peel and grate on a grater. Istolchёm nuts and garlic. Grind herbs. All the mix, add spices and prisolit. Add oil and vinegar. In a salad bowl mix the beet pulp and walnut dressing.

Pkhali well fed with traditional Georgian dishes of meat and fish and, of course, the incomparable Georgian table wine.
